These cute looking and mini whole wheat plum cake recipe is full of flavours with juicy plums and are made with mix of whole grains like dalia (cracked wheat) and with crunch of walnuts.
Once for potluck party I was searching for interesting ideas for desserts, I found this recipe here on Pinterest. I loved it and made with few changes.
The only change I made in this recipe is I have used dalia/broken wheat along with wheat flour to make it more nutritious.

Directions :
Preheat oven to 190 C.
Grease 3 ramekins or mini cake tins.
Grease each with a little ghee, and then sprinkle the base with 1/2 tsp brown sugar each.
Chop the plums, adding 1/2 a plum to each tin, followed by 1/2 a tsp of chopped walnuts.
In bowl of stand mixer, beat the clarified butter and coconut sugar for 2 minutes on high speed.
Mix egg and vanilla extract and beat again.
On the lowest speed, stir in flours, baking soda and buttermilk.
Mix remaining walnuts.
Divide between the prepared ramekins/tins.
Allow to sit in tins/ramekins for 10-15 minutes.
Bake them in preheated oven for 25 to 30 minutes, or until a tester comes out clean. After it is baked cool on wire rack.
Then turn over a platter and tap out. Garnish with walnuts and mint leaves.
Serve warm with vanilla ice cream or just like that.

I’ve never used dalia in baking cakes. What a great idea and even though it is wheat itself, I’m sure it adds much more fiber that just using whole wheat flour! I am definitely going to try using dalia. Also, love how you made individual serving cups… no fight 🙂
