The sweet and spicy combination of fresh watermelon, mango, cucumber, onions, lemon and fresh herbs will certainly brighten up your day. In addition to that, this recipe takes just a few minutes to prepare.
It’s so good for any party, potluck, or picnic. Serve this with chips or eat it just with a spoon.
Watermelon Mango Pico de Gallo or Salsa
Pico de Gallo pronounced as “PEE-koh day GUY-yo”is a traditional Mexican salsa fresca made with basic ingredients like ripe tomatoes, onions, fresh herbs like coriander leaves/cilantro or basil leaves, jalapeños, lemon juice and salt.
Some people would call this salsa, but it’s actually more like a chunky pico de gallo, or even a watermelon salad.
It’s a perfect side dish to serve with my favorite Veggie Quesadillas.
The term “salsa” refers to the word “sauce”. Salsas and pico de gallo are often prepared from similar ingredients.
Salsas, however, are thinner and contain more liquid. Pico de gallo is chunkier, and can be made with fruit as well as vegetables.
How long can I store this?
Make ahead and keep it refrigerated in an airtight container.
This dish is best enjoyed within 4-8 hours, while the watermelon and cucumber are still fresh and crisp.
Can this recipe be prepared in advance?
I would suggest to enjoy this fresh. This recipe is really quick and easy to prepare, so I suggest preparing it just before you plan to serve it.

Watermelon mango Pico de gallo
Ingredients
- 3 Cups watermelon seeded and cubed in small pieces
- 1 ripe mango peeled and cubed in small pieces
- 1 cucumber seeded and cubed in small pieces
- 1 small onion finely diced
- 1 tablespoon fresh basil leaves chopped substitute with cilantro, coriander leaves or parsley
- ¼ Cup lemon juice
- 1 teaspoon lemon zest
- 2 teaspoon maple syrup substitute with agave nectar or vegan honey
- ¼ teaspoon Red chili flakes
- ½ teaspoon sea salt
Instructions
- In a large mixing bowl, combine watermelon, mango, cucumber, onion and fresh herbs.
- In a separate bowl whisk together lime juice, lime zest, maple syrup, chili flakes and salt.
- Pour over watermelon combo and gently toss.
- Cover and refrigerate.
- When ready to serve, sprinkle with some more fresh herbs and enjoy with tortilla chips.

What other fruits can be used?
Mango not in season? No worries! Have fun adding your choice of fresh fruits like oranges, strawberries, Blue berries, pears, peaches, nectarines or Tangerines to this fabulous pico de gallo!
However, you can add black olives, sweetcorn and tomatoes also.
