Well, let me introduce you to this amazingly creamy and delicious Spinach Corn Sandwich Recipe | Palak sweetcorn sandwich recipe.
This delicious sandwich recipe has white sauce that is refined flour free. It’s prepared by making creamy, cheesy stuffing using oats powder, spinach, sweet corn, milk, and cheese.
Flavored with garlic and some Italian herbs, It’s very easy to make.
Serve this hot with tea or soup and your are sorted for a hearty breakfast.
I have always used White sauce (without all purpose flour) while making pasta, corn for Corn salsa and spinach(palak) in making Palak paneer. But after making this sandwich, I found these 3 ingredient combination so magical.

The rich cheesey white sauce that coats the spinach and corn is so delicious that you’ll barely even notice you’re eating spinach.
It’s the perfect way to sneak in some green leafy vegetables into your kid’s meals.
Ingredients used to make Spinach Corn Sandwich Recipe | Palak sweetcorn sandwich
Here are some key notes to make this sandwich –
Fresh Sweet Corn/American corn
With very short list of ingredients, I always prefer to use fresh sweet corn on the cob. Just boil/steam it and use the corn kernels.
However in absence of fresh one you may go for canned corn.
Spinach
The only leafy green for this sandwich used is fresh chopped spinach/baby spinach.
White sauce
Generally the mixture of flour/All purpose flour ( here I have used oats powder), butter and milk helps to thicken the sauce and coats well the corn.
Butter
The butter helps to create a smooth consistency in the sauce. In addition to that, butter adds delicious taste to the grilled bread slices.
Cheese–
Buttery and creamy in texture, cheese is absolutely must in this sandwich.
The flavor pairs beautifully with the sweet corn and rich white sauce.
Bread–
My most preferred is whole wheat bread for making this sandwich. However you could use white or any other bread also.

Spinach Corn Sandwich Recipe | Palak sweetcorn sandwich
Ingredients
- 1 Cup Fresh spinach / baby spinach leaves Palak
- 3/4 cup Fresh corn kernels/Makai dana boiled
- 1/2 Cup Mozzarella Cheese grated
- 1 tsp Oil
- 1 tsp Butter
- 1 tbsp garlic minced
- 2 tbsp oats powder
- 1 cup milk 200 ml
- Salt to taste
- 1 tsp Chilli flakes
- 1 tsp Oregano
- 1/4 tsp Black pepper
- 6 Slices Multigrain/whole wheat bread/White bread slices
- Butter as required to toast/grill sandwich
Instructions
- To begin with, place a thick bottom pan to heat, add butter and oil, once it's heated & melts, add minced garlic and sautee it for few minutes.
- After that put boiled corn kernels and sautee it for 2 to 3 minutes, now add spinach and cook it for few minutes.
- Add roasted oats powder /Maida/All purpose flour and cook it for few minutes.
- Next add milk to it and stir it continuously until thickens.
- Finally season with salt, black pepper powder, chilli flakes, Oregano and grated Mozzarella cheese. Give a nice mix. Turn off the flame.
To make sandwich
- Take 2 bread slices and apply butter on upper and lower side to be grilled ( you can trim the sides if you want, I didn't trim)
- Spread spinach-corn-cheese stuffing evenly on one slice.
- Cover it with other bread slice.
- Place it in grill toaster. Grill until the top browns nicely.
- Cut it, into 2 halves or triangular shape.
- Serve it with dip or tomato sauce.

If you do not have a grill/toast machine, you can use a grill pan or a tawa/griddle to make these sandwiches
Cut it, into 2 halves or triangular shape.
Serve it with dip or tomato sauce.
