To save time for the rushed morning hours, i just dry roast sooji in a pan, in advance and then store it in an air tight container for later use.

This method of dry roasting doesn’t need a drop of oil. Moreover it saves a lot of your precious morning time. If you have roasted sooji handy, you can prepare many breakfast dishes from it.

For example to make South Indian delicacy Upma, one has to spend a good amount of time in roasting sooji, which is an essential step.

So here this step of dry roasting the sooji in advance comes really handy.

 

How to dry roast sooji in a pan?

First of all sieve the semolina to get rid of any impurities, bugs or worms.

After that you can dry roast sooji in a pan. Just heat a thick bottom pan and roast the sooji in small batches on slow flame.

Continue to stir sooji in between till it achieves beautiful light brown color all over.

Remember not to over crowd the pan or else sooji might not get roasted properly.

Once roasted properly sooji turns little crisp and of free flowing consistency, transfer this to a plate and let it cool down completely. Likewise, roast another batch of sooji till it gets over.

Store this in an airtight container. It remains fresh for weeks to come.

 

How long this roasted sooji stays good?

The dry roasted sooji can stay good for up to three to four weeks, if stored properly in an air-tight container and it doesn’t come into contact with moisture.

In addition to that, if you don’t use semolina frequently, you can store this in fridge or freezer also.

To begin with, place a thick bottom pan/kadai or a non stick pan on the gas stove on low flame.

Once the pan is heated, add small batch of sooji and dry roast it on low flame by continuously stirring it on frequent intervals.

With the help of silicon or wooden spatula stir the sooji. Keep stirring it so that it doens’t get burnt.

Once done transfer this on a plate to cool. Continue to roast another batch of sooji until it gets over.

Once cool down completely, store in an airtight container for further use.
