How to make Fluffy Bhatura | No yeast Bhature served with salad, onion and pickle

 

How to make Fluffy Bhatura | No yeast Bhature recipe is a deep fried, puffed Indian flatbread. It’s super simple to make, tastes delicious when paired with classic Chole / Chana masala.

This traditional flatbread recipe is made using sour curd for fermenting the dough. It gives the bhatura amazing taste and texture which no other cooking technique can provide.

Ingredients used to make bhature

The best thing about this recipe, it doesn’t uses yeast, baking soda or baking powder.

In addition to that, it is made with Maida/All purpose flour, wheat flour, sour curd, some basic masala and a secret ingredient – semolina (sooji).

Here sooji helps the bhatura to remain fluff up after deep frying, which otherwise sink and go flat sometimes.

To begin with assemble all the ingredients to make bhatura. In a big bowl put maida, wheat flour, sooji, salt and red chili powder.

To this add oil. Mix lightly with fingers so that oil coats well the flour. Now slowly and gradually add required amount of sour curd till flour is combined well.

Knead a medium thick consistency dough. Brush some oil over it, cover and keep at warm place or under the direct sunlight near the window, to ferment for 4 to 5 hours.

In winter season, put on the light of Microwave and keep the dough inside it with door ajar. It will help the dough to ferment well.

To deep fry bhatura, prepare kadai with enough oil in it. Heat oil and lower the flame.

Meanwhile roll it round like chapati but little thicker than it. Now increase the flame and slide bhatura in oil.

Pour the hot oil over bhatura with help of ladel. Once browned on down side, turn it and fry on other side also.

It will fluff up nicely, once done drain it on kitchen towel and serve hot with chana masala.
