Aam ki launji | Sweet and spicy mango Chutney | Raw mango chutney

Delicious sweet and spicy chutney made with raw mangoes tastes best with thepla, paratha, dal rice orĀ  sabzi-roti. It's a great side dish to Indian meals. Indian thali is incomplete without these kind of pickles.

Ingredients

  • 4 raw mangoes around 500 grams
  • 3/4 cup jaggery 200 grams
  • 1 tsp methi/Fenugreek seeds
  • 1 tsp Mustard seeds
  • 1/2 tsp Haldi powder/Turmeric
  • 2 tablespoon Oil
  • 1 tbsp Lal mirchi powder/Red chili powder
  • 1 to 2 teaspoon Vinegar
  • salt to taste
  • 1 cup Water

Instructions

  • Clean, wash, peel and cut the raw mangoes in slices or cubes or grate it.
  • Then, heat oil in a heavy bottom pan. Add fenugreek seeds, fennel seeds, nigella seeds, mustard seeds and cumin seeds and fry for few seconds until aromatic.
  • Add raw mango pieces and saute on high flame for a few minutes.
  • Then add salt, turmeric powder, red chilli powder and water. Mix and bring it to a boil.
  • Cover and cook until mangoes softens. Add jaggery and mix well until it melts completely.
  • In the last, add vinegar and mix, cook for another minute.
  • Cool and store it in clean airtight glass jar. Aam ki Meethi Launji is ready to be served.

Notes

1. Adjust sweetness and spice levels in this chutney according to your taste.
2. Use more jaggery if you like your chutney to be sweet and and add more spice if you like spicy chutneys.
3. You may use sugar, brown sugar, cane sugar or khandsari instead of jaggery.
