Ingredients
250gramsJamun/Indian Java Plum
8tablespoonSugar
4Mint leaves
2cupsWater
1teaspoonPink Salt
1/2teaspoonRoasted cumin powderbhuna jeera powder
1/2teaspoonLemon juice
Instructions
To begin with, wash the jamun thoroughly under the running water.
Wipe them clean with cloth.
In a pan bring water to boil. To this add jamun. Once it comes to rolling boil add sugar and lower the flame.
Let this simmer until the flesh of jamun starts falling apart in water. It will take around 10 minutes on low heat.
Switch off the flame and let it cool. Remove the seeds using your hands.
After this blend this jamun-sugar mixture along with mint leaves, roasted cumin powder.
Strain this mixture. Season with pink salt and taste the test.
Adjust the sweetness and salt accordingly.
Your jamun panna concentrate is ready. Store this in glass bottle for further use.
To make panna
To make jamun panna, add 3 tbsp of concentrate in a glass. Add lemon juice as required.
Top it with some chilled water. Garnish with some mint leaves.
