Ingredients
1kilogramcarrots
2literfull cream milk
1cupsugar
1/2tspcardamom powder
2tsppistachios chopped
1spoon ghee/clarified butter
Instructions
To make gajar ka halwa we will need red long carrots. Peel wash and grate the carrots and keep aside.
In a thick bottom pan, pour milk and bring it to boil.
Drop the grated carrots into it and let it simmer on medium flame.
Keep stirring it constantly on regular intervals.
Once the carrots are cooked and turn soft & mushy, you will notice that milk gradually starts to reduce and turn thick like mawa/khoya.
It will take around 1.5 hours to reach this stage.
At this time add sugar and cardamom/elaichi powder. Mix and cook further till sugar is dissolved and the water released from the sugar dries up completely.
Before turning off the flame add a spoon of ghee/clarified butter and give a nice mix.
Taste it and adjust the sweetness according. Transfer this to serving bowls and garnish with chopped pistachios.
Serve hot.
If any leftovers, which I am sure won't be, refrigerate it and warm it again while serving.
