Ingredients

  • 1 kilogram carrots
  • 2 liter full cream milk
  • 1 cup sugar
  • 1/2 tsp cardamom powder
  • 2 tsp pistachios chopped
  • 1 spoon ghee/clarified butter

Instructions

  • To make gajar ka halwa we will need red long carrots. Peel wash and grate the carrots and keep aside.
  • In a thick bottom pan, pour milk and bring it to boil.
  • Drop the grated carrots into it and let it simmer on medium flame.
  • Keep stirring it constantly on regular intervals.
  • Once the carrots are cooked and turn soft & mushy, you will notice that milk gradually starts to reduce and turn thick like mawa/khoya.
  • It will take around 1.5 hours to reach this stage.
  • At this time add sugar and cardamom/elaichi powder. Mix and cook further till sugar is dissolved and the water released from the sugar dries up completely.
  • Before turning off the flame add a spoon of ghee/clarified butter and give a nice mix.
  • Taste it and adjust the sweetness according. Transfer this to serving bowls and garnish with chopped pistachios.
  • Serve hot.
  • If any leftovers, which I am sure won't be, refrigerate it and warm it again while serving.
