Instructions
To begin with shred or finely chop the veggies. Keep this aside.
To make boiled noodles
In a pot boil 3/4 cup water. Once it starts to boil add noodles and masala sachet.
Once noodles are cooked, strain the excess water if any. Keep it aside to cool.
To make Chop suey sauce
Pressure cook tomatoes with minimal water upto 3 whistles.
Once the pressure is released, cool it and remove the skin. Reserve the water for later use.
Grind it in mixer to make puree. Keep it aside.
Next take a pan add oil. Once heated, add finely chopped ginger, garlic saute it.
Then add onions and all of the above mentioned vegetables one by one mentioned in the list.
Saute on high flame so that it gets cooked yet retains its crispness.
Season with salt and pepper. Add soya sauce, red chilli sauce, vinegar, tomato ketchup and sugar.
Mix it well. Then add prepared tomato puree too. Bring it to a boil.
To this add leftover boiled tomato water that we reserved to use later on. Cook this for a while.
Then add dissolved cornflour, stir well and let it simmer for a while. Taste the test and adjust the seasonings and sauces accordingly.
Your Chop suey is ready. Garnish with spring onion greens.
Serve hot this with fried noodles (optional) and buttered garlic bread.
Notes
1. You could serve this American Chop suey over the bed of crispy fried noodles. I haven't as my family prefers that way.2. Adjust the heat level as per your family's liking. We like to have this medium spicy with hint of mild sweetness.
