Sweet potato and Apple Kheer

This very interesting combination of sweet potato and apple kheer is gluten free, can be madeĀ  vegan, easy to make, a must try recipe for the people who think that fasting food can't be made tasty.

Ingredients

  • Sweet potatoes 1 cup
  • Apples 1/2 cup
  • Water 1/2 cup
  • Grated fresh coconut 1/4 cup
  • Jaggery 1/2 cup
  • Coconut milk 1/2 cup
  • Cinnamon powder 1/8 tsp
  • Adrak/Ginger grated 1/4 tsp
  • Cashews 4 pieces
  • Almonds 4 pieces
  • Raisins 6 pieces
  • Pistachios 4 pieces

Instructions

  • Soak raisins for 10 minutes, drain the water and keep it aside.
  • Grate sweet potatoes and keep it in bowl filled with water. Similarly grate apples and keep it submerged in bowl of water.
  • This step will help to stop oxidation process of sweet potato and apples.
  • After that heat ghee in a pan on medium flame. Drain water from grated sweet potatoes and add it into warm ghee.
  • Saute sweet potatoes for about 5 to 7 minutes of till you can smell the nice aroma.
  • Next add drained and squeezed grated apples into it. Saute again for a while.
  • Add water to cook further. Now add grated jaggery to this and cook till it melts completely.
  • To this add slivered cashews, almonds and raisins.
  • Once the mixture start softening, add grated fresh coconut.
  • Saute well. Add coconut milk and stir well bringing to mixture to simmer.
  • To this add grated ginger & cinnamon powder and cook for 2-3 minutes before turning off the flame.
  • Transfer this to serving bowls and garnish with apple slices, pistachios and serve warm or chilled.

Notes

To make this recipe vegan, use vegan friendly ghee or butter instead of regular cow ghee/clarified butter
