Vegetable Fried Rice Recipe | Chinese Fried Rice | Veg Fried Rice

Vegan, delicious, quick to make and flavorful, vegetable fried rice recipe | Chinese fried rice | Veg fried rice is a fusion (Indo-Chinese) version of making rice with mix of vegetables and some sauces like Soya sauce and red chilli sauce to flavor this.

Ingredients

For cooking rice

  • Basmati rice – 1 cup
  • Water 3 cups
  • Salt to taste

For Fried rice

  • Onions 1 sliced
  • Beans – 1/4 cup finely chopped
  • Carrot – 1/4 cup finely chopped
  • Cabbage – 1 cup shredded
  • Capsicum -1/4 cup finely chopped
  • American corn boiled - 1/4 cup
  • Fresh green peas - 1/4 cup
  • Spring onion greens – 2 1/2 tbsp finely chopped
  • Olive oil/Any refined oil – 2 tbsp

Seasoning

  • Vinegar – 1 tsp
  • Red Chilli sauce – 1-2 tsp
  • Soya sauce -2-3 tsp
  • Salt to taste
  • Black pepper powder - 1/2 tsp

Instructions

Prepare Rice

  • Soak Basmati rice for 1 hour. Drain it and keep it aside. Now heat a deep vessel, add 3 cups of water and bring it to boil.
  • To this add soaked basmati rice and salt. Cook it upto 80 % on high flame.
  • Drain the water using a sieve and wash the cooked rice under cold tap water to stop further cooking of rice.
  • Drain completely and keep it in the fridge to cool. Your rice is ready.
  • If you are using leftover rice then move on to next step.

Prepare Vegetables

  • Chop all the veges lengthwise or dice them. I have used french beans, carrots, capsicum, cabbage, American corn, fresh peas and spring onions.
  • Mince garlic, ginger and chillies. Boil the American corn and green peas. Keep it aside.
  • Heat oil in a pan, when the oil is very hot, add garlic and ginger, saute for a few seconds. Then add beans and fry for a few seconds, followed by carrot, cabbage, capsicum and spring onion greens.
  • Saute all the vegetables on high flame by continuosly stirring it as we want the vegetables to be crunchy but not fully cooked. In the last mix in peas and american corn.

For fried rice

  • Once vegetables are done, add cooked rice, soya sauce, vinegar, salt to taste and black pepper powder.
  • Mix well and serve hot just like that or with Manchurian gravy. Garnish with spring onion greens.

Notes

1. You can add the sauces according to your taste.
2. The rice must be cooled before making this recipe. Keep this in mind and plan accordingly.
