Avocado Pineapple and Coconut ice cream

Avocado, Pineapple and Coconut ice cream is gluten free, vegan, silky smooth, luscious, home-made, made with just 6 ingredients and eggless. This ice cream doesn't require ice cream maker, this is just blend and freeze recipe.

Ingredients

  • Avocados 2
  • Pineapple 1 cup
  • Shredded Coconut 1/2 cup
  • Coconut milk 200 ml
  • Non dairy Cream 2 cups
  • Sugar 1/2 cup or less or more to taste

Instructions

  • Cut the avocado in to half. Remove the seed and scoop the flesh. Put this into a food processor. To this add chopped pineapple, and shredded coconut.  Whirl it until smooth.
  • Next add coconut milk and heavy cream into the blender and pulse once again. Mix sugar and blend everything well.
  • Pour into a plastic box/metal container with cover, and refrigerate for few hours until cold.
  • Freeze for about 2 to 3 hours, then with the help of fork, mash it into a slush. Again transfer this back in the freezer.
  • Repeat the freezing and mashing about 2 to 3 times so that the ice cream will be smooth. Once your are done freeze it overnight.
  • Scoop it and serve with coconut slices and pineapple.
