Air fryer Sabudana vada

These vegan Air fryer Sabudana vada /Sago fritters is a modern version (no deep fry) of Maharashtrian delicacy Sabudan vada that is consumed during fasting days of Shravan.
Enjoy this delicious snack with some green chutney and chai.

Ingredients

  • 1 cup Sabudana/sago
  • 1 cup boiled potatoes 2 medium sized
  • 1 tsp cumin
  • 2 green chillies
  • 3-4 tbsp chopped coriander
  • 1/4 cup roasted and crushed peanuts
  • 1 tsp Khandsari sugar powder
  • salt to taste
  • 1/2 Lemon juiced
  • oil to brush vadas

Instructions

  • Wash the Sabudana/sago under running water 2-3 times. Discard the excess water and leave it covered, to soak overnight.
  • In between if you feel the soaked sabudana looks dry then just add few splashes of water, keep it covered until you are ready with other ingredients.
  • Meanwhile coarsely crush roasted peanuts in mortar pestle or just pulse into mixer. No need to make a fine powder.
  • After that mash the boiled potatoes. Add  cumin, rock salt, sugar, minced green chillies, coriander leaves and lemon juice. To this add peanuts and soaked sabudana.
  • Mix everything together to make a dough. Pinch a lemon size dough and shape it round. Flatten it with your palms, smoothen the edges.
  • Don’t flatten them completely, keep them a little plump. This will make the vadas crisp from outside with a soft texture from inside.
  • Repeat the process, make all vadas and store in an airtight container. Place this in the fridge until you air fry them.

To Air fry

  • Preheat the air fryer at 200 degrees for 10 minutes. Brush a little oil on the Air fryer basket.
  • Arrange prepared vada in a line leaving a little space between each of them. Brush oil over vada and Air fry for 10 minutes at 200°C.
  • After that pull out the Air fryer basket, turn vadas upside down. Brush some oil on top. Air fry for 10 to 12 minutes until crisp at 200°C.
  • Repeat the process for all the remaining vadas. Yummy, crispy, Air fryer Sabudana vadas are ready to devour.

Notes

1. While you Air fry these vadas, there is no need to place any aluminum foil or parchment paper beneath in the basket. Just brush oil and it's good to go.
2. I would highly recommend to refrigerate the vada for 30 minutes before Air Frying for best results.
