Ingredients

  • 3 Cups watermelon seeded and cubed in small pieces
  • 1 ripe mango peeled and cubed in small pieces
  • 1 cucumber seeded and cubed in small pieces
  • 1 small onion finely diced
  • 1 tablespoon fresh basil leaves chopped substitute with cilantro, coriander leaves or parsley
  • ¼ Cup lemon juice
  • 1 teaspoon lemon zest
  • 2 teaspoon maple syrup substitute with agave nectar or vegan honey
  • ¼ teaspoon Red chili flakes
  • ½ teaspoon sea salt

Instructions

  • In a large mixing bowl, combine watermelon, mango, cucumber, onion and fresh herbs.
  • In a separate bowl whisk together lime juice, lime zest, maple syrup, chili flakes and salt.
  • Pour over watermelon combo and gently toss.
  • Cover and refrigerate.
  • When ready to serve, sprinkle with some more fresh herbs and enjoy with tortilla chips.
