This lemonade is made by infusing the flowers of the Butterfly Pea plant in hot water.
Here I have used fresh flowers, so removed the green stem and leaves, as if left on they will turn the tea a little bitter in taste.
If using dried flowers then you can omit this step and directly drop them into hot water.
To begin making lemonade, heat water in a sauce pan.
Pour the hot water over the butterfly pea flowers.
Let them steep for no longer than 3 to 4 minutes. The color of the water will turn royal blue in color.
Add simple sugar syrup or powdered sugar as required and stir well.
Now strain the tea and let it cool down completely. At this stage, if you wish to have the it as warm tea, there is no need to cool it down. Serve it right away.
But since we will serve this as lemonade, hence keep it in the fridge to chill further for few hours.
Once the blue tea is cooled, add lemon juice in it and you will see the magic, the color of blue tea will turn to purple/violet.
Pour into serving glasses with plenty of ice and lemon slices in it.
Add some fresh butterfly pea flower petals as garnish and serve chilled.
