Vegan, delicious, quick to make and flavorful, vegetable fried rice recipe | Chinese fried rice | Veg fried rice is a fusion (Indo-Chinese) version of making rice with mix of vegetables and some sauces like Soya sauce and red chilli sauce to flavor this. It tastes amazing with Veg Manchurian.

Vegetable pulao is somewhat similar rice recipe variation with mix of vegetables we Indians love to eat. It goes well with Dal palak and Vegetable raita.

Vegetable Fried Rice Recipe | Chinese Fried Rice | Veg Fried Rice, a versatile recipe

Making rice can’t get simpler than this. The versatility of Ingredients makes it most sought after dish that is loved by most Indians.

Here in India it is one of the most ordered street food from Indo Chinese cuisine. This pairs well with any Manchurian gravy dish or Dal recipes.

A good portion of ingredients like leftover steamed rice, and whatever vegetables lying in the fridge works well for this recipe.

The original Chinese style fried rice is typically made with some meat, eggs and vegetables that makes it a complete meal.

There is no hard and fast rule to use anything particular type of Ingredients for this recipe.

Vegetables

Use vegetables of your choice that can be coloured bell peppers, brocolli, American corn, cabbage, french beans, green peas, onions, spring onions and carrots.

For making fried rice use all of these vegetables or whatever is available in your fridge.

Rice variety

For rice, I always prefer to use long grain basmati rice. If you don’t have these, use whatever rice is available with you. Brown rice works well too.

Pre cooked rice or Leftover rice

Cold, cooked rice or leftovers works best so I always cook and cool the rice beforehand or sometimes use leftover rice to make this.

Seasonings

Play around with the seasoning levels until it achieves the taste just how you like it.

Sauces used

I prefer to use dark Soya sauce, red chilli sauce and a dash of vinegar.

So come join me in making indo Chinese version of making vegetable fried rice.

 

Step by step instructions and pictorial presentation to make Vegetable Fried Rice Recipe | Chinese Fried Rice | Veg Fried Rice

 

Prepare Rice

Soak Basmati rice for 1 hour. Drain it and keep it aside.

Now heat a deep vessel, add 3 cups of water and bring it to boil.

To this add soaked basmati rice and salt. Cook it upto 80% on high flame.

Drain the water using a sieve and wash the cooked rice under cold tap water to stop further cooking of rice.

Drain completely and keep it in the fridge to cool. Your rice is ready.

 

 

If you are using leftover rice then move on to next step.

 

Prepare Vegetables

Chop all the veges lengthwise or dice them. I have used french beans, carrots, capsicum, cabbage, American corn, fresh peas and spring onions.

Mince garlic, ginger and chillies. Boil the American corn and green peas. Keep it aside.

Heat oil in a pan, when the oil is very hot, add garlic and ginger, saute for a few seconds.

 

 

 

 

Then add beans and fry for a few seconds, followed by carrot, cabbage, capsicum and spring onion greens.

Saute all the vegetables on high flame by continuosly stirring it as we want the vegetables to be crunchy but not fully cooked.

 

In the last mix in peas and American corn.

For fried rice

Once vegetables are done, add cooked rice, soya sauce, vinegar, red chilli sauce, salt to taste and black pepper powder.

 

 

 

Mix well and serve hot just like that or with Manchurian gravy. Garnish with spring onion greens.

 

Notes

1. You can add the sauces according to your taste.
2. The rice must be cooled before making this recipe. Keep this in mind and plan accordingly.

Ingredients

For cooking rice

  • Basmati rice – 1 cup

For Fried rice

  • Onions 1 sliced
  • 1 tbsp Garlic minced
  • 1 tsp Ginger minced
  • Beans – 1/4 cup finely chopped

  • Capsicum -1/4 cup finely chopped

  • Spring onion greens – 2 1/2 tbsp finely chopped
  • Olive oil/Any refined oil – 2 tbsp

Seasoning

  • Vinegar – 1 tsp
  • Red Chilli sauce – 1-2 tsp
  • Soya sauce -2-3 tsp
  • Salt to taste
  • Black pepper powder - 1/2 tsp

Instructions
