Are you craving for something yummy and healthy while you fast? If yes then come, Indulge yourself with this special Rajgira Fruit Tart | Amaranth Fruit Tart | No bake fruit tart. It takes few minutes to prepare, and yummy too.

The recipe for making fruit tart for fasting couldn’t be more simple and easier than this. This is loaded with fresh fruits, nuts and hung curd.

There are three different components to this delicious fruit tart : a rajgira Jaggery base, hung curd filling, & nuts and fruit topping. And how pretty and inviting it looks !!

 

Navratri Fasting friendly recipe

According to Wikipedia Rajgira/Amaranth is known as superfood due to its proven health benefits. This is gluten free and is low on glycemic index.

This being my favourite grain, I have utilised it once again for making fasting friendly recipe, Rajgira Fruit Tart | Amaranth Fruit Tart | No bake fruit tart which is one of my favourites.

Ingredients to make Rajgira/Amranth fruit tart :

Rajgira/Amaranth popped 1 cup
Jaggery 3/4 cup
Hung Curd 1/2 cup
Honey 1 spoon
Lemon/orange zest 1/4 tsp
Fresh Seasonal fruits strawberries, oranges, and kiwis.
Dry fruits & dry berries to decorate

 

 

 

 

How to make Rajgira/Amranth fruit tart

First make hung curd by hanging the curd for 3 hours in muslin cloth. Let the excess water drain out. You hung curd is ready. Add 1 spoon honey to hung curd

Add 1/4tsp lemon/orange zest to hung curd.

Next melt the jaggery with some water in a non stick pan. Once it is melted add popped Rajgira to this and combine well. Put off the flame.

Grease well the pie tin with melted butter/ghee. With help of a spoon spread  rajgira-jaggery mixture on to greased pie tin.

Spread hung curd with spoon on to rajgira tart.

Chop the fresh fruits and dry fruits. Keep the dry berries handy in a bowl.
For decorating the tart lay chopped fruits and dry fruits & berries in attractive way.

Place this tart in the fridge for few hours.
Remove from the fridge when you want to serve and cut the tart into pieces.
