My Tex-Mex sizzler recipe consists various components. The platter has vegetables like Broccoli, Zucchini,Baby Corn, Mushrooms, Bell Peppers. These are cooked in Tex-Mex Sauce & served with Parsley Rice, sauted veggies & homemade French Fries.

  • Green chilli ,finely chopped -1
  • Onion, chopped - ½
  • Uncooked Basmati rice - 1 cup
  • Chopped fresh parsley/coriander leaves - ½ cup
  • Salted butter - 2 tbsp
  • Fresh parsley, minced - 2 tbsp
  • Water - 1 +1/2 cups
  • Oil & butter - 1 tsp each
  • Salt to taste
  • For making TEX-MEX SAUCE :
  • 500 gms tomatoes
  • ¾ cup chopped onions
  • 1 green chilli , chopped
  • Red, green & yellow bell peppers chopped in chunks half piece of each.
  • ½ tsp chilli powder
  • ¼ tsp dried oregano
  • 2 pinches of sugar
  • Oil 2 tbsp
  • salt to taste
  • Half pack of hakka noodles
  • Salt to taste
  • Oil 1 tsp
  • Tex mex sauce 2 to 3 tsp or more
  • Onion 1 diced
  • Zucchini ¼ cup
  • Cherry tomatoes 6
  • Mushrooms 10 pcs
  • French beans 5 to 6 pcs
  • Broccoli ¼ cup
  • yellow green & red capsicum cut into dices1/4 cup
  • baby corn thinly sliced ¼ cup
  • Cherry tomatoes few
  • 1 carrot sliced length wise
  • salt to taste
  • Garlic 2 cloves
  • oregano 1 tsp
  • chilli flakes1 tsp
  • butter 1 tsp
  • potatoes 4
  • Salt
  • Corn flour
  • Pizza seasoning
  • Chilli flakes
  • Oil to deep fry
  • Sizzler plate
  • Butter & ice cold water
  • Few cabbage leaves
  1. For making parsley rice :
  2. Wash the rice. Soak it for 5 minutes. Boil the rice in water for about 15 minutes on a low flame. Once cooked upto 90 percent drain the water and keep it in the colander.
  3. Melt the oil & butter in a pan. Add the chopped onion and green chilli.
  4. Mix in the chopped parsley (1 cup).
  5. To this add cooked rice.
  6. Adjust salt to taste. Gently toss together. Remove from heat.
  7. Next add 2 tablespoon fresh parsley. Gently toss everything well.
  8. For making tex mex sauce :
  9. Dip the tomatoes in hot water for 10 minutes. Peel off the skin and chop it.
  10. Heat oil and sauté onions for few minutes. Mix in chopped green chilli and sauté again for a few seconds.
  11. Throw in chopped chunks of all peppers and saute it.
  12. In addition to that put tomatoes, chilli powder, oregano, sugar and salt.
  13. Simmer for 10 to 12 minutes till it is thick. Keep aside.
  15. Boil the water first. Add hakka noodles with a tsp of oil.Cook it till al-dante. Drain and keep aside.
  16. In a pan add cooled noodles. Stir in tex-mex sauce. Mix well
  17. For stir fry vegetables :
  18. In a pan put butter. Once it's melted add chopped garlic cloves. To this add all the vegetables one by one, and keep on sautéing. Finish with salt, oregano and chilli flakes.
  19. For French fries :
  20. Cut the potatoes into fries shape. Boil them for 5 minutes with salt. Drain the water. Coat it with cornflour and asd the seasoning and chilli flakes.Stash in zip loc bag in freezer for an hour.
  21. Take out and deep fry.
  22. For serving the sizzler :
  23. Heat the sizzler plate for good 15 to 20 minutes. Keep this hot plate on wooden plate with the help of tongs. Spread cabbage leaves all over at the bottom.
  24. Arrange prepared rice, noodles, stir fried vegetables over cabbage leaves. Pour tex mex sauce over it. Add french fries on one side.
  25. Now place chunks of butter in four corners of the sizzler plate. It will make the sizzling sound as the iron plate is sizzling hot.
  26. Then pour the oil and ice water mixture on all the sides of the heated plate. This will give sizzling and smokey effect to the dish.
  27. Your Tex-Mex Sizzler is ready to serve
