Royal Amritsari Tikki with Dip is made with Vegetable and dry nuts is a healthy & nutritious snack. It is flavoured with garlic and other Indian spices.

Ingredients
  • Oil 2 tsp
  • Ginger garlic green chilli paste 1 tsp
  • French beans boiled ¼ cup
  • Carrot 1 chopped and boiled
  • American corn boiled 2 tbsp
  • ¼ cup blanched walnuts
  • 1 spoon Cashew nuts powdered
  • 1 spoon almonds powdered
  • Turmeric powder 1 tsp
  • Black pepper powder 1 tsp
  • Red chilli powder 1 tsp
  • Coriander powder 1 tsp
  • Salt to taste
  • 1 tbsp feeka mawa/khoya
  • ¼ cup boiled & mashed potatoes
  • 1 bowl paneer
  • Cheese cubes as required
  • Cornflakes to coat tikkis
  • APF/Maida 3 spoons to make slurry
  • To make achaari/Pickle dip :
  • Mustard seeds ½ tsp
  • Sounf/fennel seeds ½ tsp
  • Cumin ½ tsp
  • Onion seeds/kalonji. ½ tsp
  • Methi dana ½ tsp
  • Hing a pinch
  • For Green paste :
  • Green chilly 1
  • Fresh coriander leaves handful
  • Lemon juice 1-2 tsp
  • Salt to taste
Instructions
  1. Take a pan. Put oil into it.
  2. Add ginger garlic and green chilies into it.
  3. Add boiled vegetables to it. Add blanched walnuts to it.
  4. Add masalas like turmeric powder, black pepper powder, red chilli powder, coriander powder.
  5. Now add cashew powder and unsweetened khoya/mawa.
  6. Switch off the flame. Remove this mixture into a bowl.
  7. Now to this add boiled and mashed potatoes.
  8. Add crumbled paneer and powdered almonds.
  9. Mix everything together to make smooth dough.Divide them into equal portions.
  10. Make round tikkis. Make a deep well in the centre of tikki.
  11. Flatten it and place a cube of cheese in the centre and bring the edges closer and roll it round like a tikki/patty.
  12. Dip tikkis in maida slurry.
  13. Coat them with cornflakes.
  14. Deep fry one or two tikkis at a go in hot oil on high flame first and then reduce the flame to medium to low.
  15. Fry tikkis till it becomes golden brown on the top.
  16. serve with achaari dip or Mustard sauce.
  17. To make achaari/Pickle dip blend all the ingredients listed under the dip section into coarse powder.
  18. For Green paste blend ingredients listed under this section in mixie. Green paste is ready.
  19. Mix this green paste and spicy achaari/ pickle masala with 1 cup hung curd. Your achari dip is ready.
  20. Serve Royal Amritsari tikkis hot with this Achaari dip.
