Imli ki Kulfi recipe | Tamarind Candy is vegan, GF, easy and good alternative to costly ice cream when you’re craving something cold and satisfying on a hot day

Ingredients
  • Tamarind ¼ cup
  • Dry imli/tamarind leaves powder paste 3 Tbsp
  • Dates, de seeded 1 cup
  • Date palm jaggery 1 cup
  • Red chilli powder 1 spoon
  • black salt 1 tsp
  • Asafoetida ½ tsp
Instructions
  1. First wash and pat dry imli/tamarind leaves.
  2. Micro high it till it gets dry completely.
  3. Cool and crush with palms.
  4. Add little water to make paste.
  5. Wash and soak tamarind in luke warm water.
  6. Remove tamarind pulp.
  7. Seive and remove all extras.
  8. Clean and wash the dates, pressure cook them for 2-3 whistles and then pulse it. Make paste of it.
  9. In a non stick pan first melt date palm jaggery on low flame. Add tamarind paste. Next add dates paste. Add dry tamarind leaves paste.
  10. Next add red chilli powder, black salt to taste, roasted cumin powder and asafoetida. cook for 5-7 minutes. This is the concentrated pulp for our kulfi.
  11. To make imli kulfi dilute the pulp with water. Check the spices and the flavors, they should blend well. Don't strain the kulfi mix.
  12. Take big, thick stem of tamarind tree. Cut it into 4 pieces. At the one end of the stem slit open with knife.
  13. Peel the brown part of stem till it's inserted in kulfi
  14. Pour into kulfi/Popsicle moulds and freeze.
  15. After an hour insert tamarind tree stem into kulfi to set well and freeze further for 8 more hours.
Notes
1. If you don't have an access to Tamarind leaves you can try this kulfi with imli/Tamarind only. Using Tamarind leaves is purely optional.

2. You can use any type of jaggery or sugar.

3. Un mold kulfi/ popsicles easily by placing it under tap water for few seconds.
