Mango China grass Pudding | Mango pudding is easy, quick, Gluten free & vegan friendly, vegetarian dessert made with few easily available ingredients from your kitchen pantry.

Ingredients
  • China grass 5 gms
  • Milk ½ liter
  • Sugar 3 to 4 tablespoons
  • Cardamom powder ½ tsp
  • Mango cubed 1 big
  • Slivered Pistachios 4
  • Slivered Almonds 4
Instructions
  1. First assemble all the ingredients.
  2. Snip half packet of china grass/agar agar into small pieces with scissors. Soak this into ½ liter milk for about 15 minutes. Keep it aside.
  3. Chop 1 mango in small pieces.
  4. Now boil milk with china grass. Keep the flame on low and stir continuously so that it dissolves completely.
  5. Next add sugar and cardamom powder to this. Bring it to rolling boil and simmer for 5 more minutes.
  6. After 5 minutes switch off the flame and strain the milk mix through sieve.
  7. Cool it a bit and immediately mix chopped mangoes and dry fruits to it. As china grass sets on room temperature quickly you need to keep an eye on chinagrass.
  8. Pour into desired molds or in a bowl. I have used patterned silicone molds for beautiful look.
  9. Keep in the fridge to chill for 3 to 4 hours. Demold and serve with chopped dry fruits on the top.
Notes
China grass sets quickly at the room temperature so pre prepare everything and then start making this dessert.

You can set china grass in small individual bowls or in shot glasses.

For this recipe I have used Alphanso mangoes.

Adjust the quantity of sugar according to sweetness of mangoes.

For Vegan Friendly options, use almond milk or coconut milk.
