Baked Sweet potato flatbread Recipe is sweet & spicy. It has sweet potatoes & pears, that is beautifully flavoured with Mozrella cheese and thyme.

Ingredients
Boiled sweet potato - 1 big
Rock Salt - 2 spoons
Castor Sugar - 2 spoons
Green pear - half
Maida/ All Purpose Flour - 2 cups
Olive oil - 2tbsp
Thyme sprigs - few
Peels of sweet Potato and pear
Mozzarella Cheese - 25 gms/ 2 spoons plus 2 tsp for topping on flat bread
To activate the yeast :
Active dry yeast - 2 grams
Sugar - 1tsp
Warm Water half cup
To serve with :
Lettuce leaves and Tomato salad
Black Pepper powder to sprinkle on salad
Olive oil - 1 tsp to drizzle on salad
Instructions
To activate the yeast, mix yeast in half a cup of luke warm water with sugar.
Mix it vigoursly and place in warm place for 10 minutes to activate. Keep it aside.
Meanwhile in a bowl peel and chop sweet potato. Don't discard the skin. Keep it for later use.
Peel and cut the half of green pear. Keep the peels also for later use.
Grate sweet potato and pear nicely. Next mix in maida, castor sugar, rock salt, olive oil in sweet potato and pear mixture.
To this, add grated mozrella cheese and thyme.
Now make a well in the centre of this mixture and pour activated yeast. Knead the soft dough using very little water if required.
Roll the dough rectangular and cut it from the centre making two halves. This way you make 2 vertical, broad strips. Stretch the dough and pinch corners to make design like shown in the pictures below.
Place mozzarella cheese pieces on flat bread. Place sweet potato and pear skins.
Sprinkle some olive oil and black pepper powder on top of it.
Bake in preheated oven by laying parchment paper underneath on baking tray, for 15 to 18 Minutes
Once cooled take it out and cut into pieces.
Serve with Olive oil, lettuce, cherry tomatoes and sprinkle some pepper.
