Gobhi Aloo Dhaba style | Aloo Gobi fry

- Cauliflower 1 big sized (500 gms)
- Potatoes 2
- Tomatoes 2 grated
- Ginger 1 inch piece grated
- Green chilli 1
- Oil 3 tbsp
- Salt to taste
- Coriander powder 1 tbsp
- Turmeric powder ½ tsp
- Red chilli powder 1 tsp
- Garam masala ½ tsp
- Fresh coriander leaves 2 tsp
- Clean the cauliflower throughly discard the thick stems and check for any worms.
- Cut the medium size florets and immerse it in pot full of salted warm water. Keep it aside for 15 minutes.
- Wash it again with plain water and spread on a kitchen towel to absorb the excess water.
- Peel and chop potatoes in big cubes. Immerse the potatoes in salted water as well.
- After 15 minutes heat Oil in pan. Add drained potato cubes, saute them.
- Cover and cook on low heat. Sprinkle salt over it and cook till you get golden edges.
- Check with knife if it's done.
- Remove potatoes on a plate. In the same pan put cauliflower florets and first cook it in high heat.
- Once it achieves light golden brown colour, add salt and then cover and cook it on low heat.
- Check if it's done, drain it on paper towel and keep it aside.
- After that mix shallow fried cauliflower and potatoes in the same pan.
- Mix in all dry spices except garam masala, put ginger and chillies too. Mix everything.
- Add grated tomatoes and let it cook for 5 to 7 minutes.
- Once the water from tomatoes have evoparated, mix gently everything together.
- Put the lid on and let it cook for 2-3 minutes.
- Open the lid, by now everything is nearly cooked, let all the moisture evaporate.
- Lastly Garnish with Coriander leaves n sprinkle a pinch of Garam masala on top.
- Serve hot with Ghee waali Garam Rotis or paranthas.
