Ingredients
  • Desiccated /dry coconut – 2 cups
  • Mango Pulp – 1 cup + ⅛ cup for filling
  • Clarified Butter or Ghee – 1 tbsp.
  • Condensed Milk – ½ cup
  • Cardamom powder – 1 tsp
  • Dry coconut – ¼ cup, for rolling
Instructions
  1. Extract the mango pulp by discarding the skin and seed.
  2. In the blender make a nice lucious puree.
  3. Heat up a non stick pan and pour ghee.
  4. Once it melts, throw in dry dessicated coconut and roast it well on slow flame for 2 minutes.
  5. Keep stirring it continuously.
  6. You can also use fresh coconut for this recipe. Just make sure to roast it well till it gets dry.
  7. Add 1 cup mango pulp and mix well. Continue to stir it until the mixture has dried up well.
  8. It's time to add in the condensed milk.
  9. Remember to put the flame on low throughout. Keep cooking till the mixture dries up completely. It should not be sticky.
  10. Now it’s time to check the mixture, if it can be formed in a Ladoo or not. Take a small amount of the mango mixture and let it sit for a while.
  11. Try to shape the mixture into a ladoo, if you are able to form a ladoo, the mixture is perfect. It takes around 10 minutes to reach that stage where it can be formed into a Ladoo.
  12. Sprinkle some cardamom powder over the mixture, give a gentle stir and turn off the flame. Let the mango mixture cool down.
  13. Make small ladoos and roll it in dry dessicated coconut.
  14. Your delicious mango coconut ladoos are ready.
  15. For making Mango Lava ladoos:
  16. This step is purely optional. If you wish to add a surprise element into this pretty looking sweet dish follow the instructions carefully.
  17. Take one ladoo and make a small cavity into it.
  18. Remove the excess part from cavity and carefully fill in mango pulp into it with the help of a piping bag.
  19. Cover that cavity with earlier removed excess part of Ladoo. Roll it again gently and give it a round shape.
  20. While serving, cut the Mango coconut ladoo with knife, from the center. Beautiful mango pulp would be oozing out of ladoo, when you bite into it.

Notes
For making this laddu recipe i have used Alphonso mangoes. Use any variety which your family loves.

The bright color of the ladoos depends on the quality of mangoes.

No extra sugar has been added to laddus, as this recipe already has condensed milk which is quite sweet.
