Fruit Sushi Recipe (Frushi) | Rice kheer Sushi is a unique and innovative way of making sweet dessert. Fruit sushi is pretty,colorful,versatile and delicious.

Ingredients
  • Rice 100 grams
  • Milk 1 liter
  • Coconut milk 35 ML
  • Sugar 250 gms
  • Cardamom powder 1 tsp
  • Bay leaf 1
  • Ghee/clarified butter 1 Tbsp
  • To make vanilla custard :
  • Milk ¼ liter
  • Vanilla Custard powder 2 tablespoons
  • Sugar 3 spoons
  • For layering on frushi rolls :
  • Pistachios coarse powder mixed with honey 2 tbsp
  • Kiwi chopped 1
  • Dragon fruit chopped ½
  • Aluminum foil wraps 2
  • Ghee/clarified butter to spread on foil 2 tsp
  • Salted caramel as required to garnish
  • Almond crumb as required to garnish
Instructions
  1. To make rice kheer/pudding :
  2. Soak rice in enough water for 30 minutes.
  3. Drain and set aside.
  4. Heat ghee in a pan on medium heat.
  5. Once ghee melts, add bay leaf to it.
  6. Add the soaked and drained rice and give a stir.
  7. Cook the rice for 2-3 minutes on medium heat till you get a nice aroma and rice turns light pink in color.
  8. Set aside.
  9. Add milk to a heavy bottom pan and bring it to boil.
  10. Once it boils, add the coconut milk and sauted rice and stir.
  11. Lower the heat to medium and cook the rice with the milk, stirring at regular intervals. Cook for around 20-25 minutes or till rice is completely cooked and kheer looks nice and thick.
  12. After the kheer has thickened quite a bit, add sugar cardamom powder and stir. Cook for few more minutes till it becomes really thick.
  13. Switch the flame off and keep aside for cooling.
  14. To make vanilla custard :
  15. Mix a little of the milk with the custard powder and sugar in a mixing bowl.
  16. Heat the remaining milk in a saucepan to a rolling boil. Remove it from fire.
  17. Pour the custard powder mixture into milk, whisk continuously so that it doesn't stick to the bottom.
  18. Put the saucepan on to stove again and bring to the boil, whisking constantly, until the custard thickens.
  19. Remove from the heat and let cool.
  20. *****Sprinkle some sugar over ready custard to prevent formation of creamy layer over it.
  21. Mix pistachios powder with honey in a bowl and keep aside.
  22. To make frushi rolls :
  23. Now to make frushi, take aluminium foil.
  24. Cut it into 2 equal rectangular pieces.
  25. Place plastic mat under one foil to roll it easily.
  26. On that foil spread the thick rice kheer evenly.
  27. Tap it to spread with your palms and fingers.
  28. If needed dip your fingers in water to spread evenly and quickly.
  29. Cover the kheer with another piece of foil.
  30. With the help of rolling pin, roll it nicely by applying little pressure, so that layer of rice kheer should spread evenly.
  31. Now remove the top aluminum foil, and cut the uneven corners of kheer with help of pizza cutter.
  32. Top it with cooled vanilla custard.
  33. Spread powdered pistachios honey spread over it.
  34. Finish it with chopped kiwi and dragon fruit pieces.
  35. Place your fruits in a line, starting on the near edge of the rice layer.
  36. Hold the edge of the mat with your thumbs.
  37. Lift the foil and fold it over. Make sure to keep the filling ingredients in place and that the rice sticks together.
  38. Continue to roll the sushi.
  39. Tuck the front edge of the mat into the roll, and keep removing the mat as you continue to roll the sushi.
  40. Roll slowly by holding everything together.
  41. Tighten the sushi roll.
  42. You will need to tighten the roll to keep ingredients from falling out when you cut it.
  43. Place the roll for couple of hours in the fridge before cutting it.
  44. Cut the roll into almost 1 inch thickness using a sharp knife.
  45. Remove the foil from each roll. Place it on serving platter.
  46. I have garnished it with salted Caramel, almond crumb and chopped fruits.
  47. Enjoy the chilled frushi.
