Peel and wash potatoes. Cut into cubes and soak this in water.

Meanwhile, heat the pan with oil. Once its hot, to this add cumin, let it splutter. Immediately add cubed potatoes and saute.

Add required salt, cover and let it cook on slow flame for about 7-10 minutes.

In between open the lid, turn potatoes upside down and let it cook.

Check with knife, once done add red chilli powder, amchur powder and mix well so that the spices coat the potatoes well.

Roast for a few mins. Finally add coriander leaves and mix. Switch off the flame.

3. Add a teaspoon of lemon juice instead of dry mango powder/Amchoor if you prefer a tangy jeera aloo.
