Pretty Pink Strawberry Cheesecake Cupcakes is the perfect recipe for any occasion.It’s easy to make, it’s not too sweet…just incredibly delicious!It's a make ahead recipe so when required just pull out of fridge and serve.

Ingredients
  • Strawberries - 250 gms
  • Marie biscuits - 1 pack
  • Melted butter - 3 tbsp
  • Sugar - ¾ cup
  • Hung curd - 1 cup
  • Cream cheese - 1 cup
  • Gelatin around 8 to 10 grams for both layers divided into ½, disssolved in warm water - 1 tbsp
Instructions
  1. For Bottom Layer :
  2. Mix in the melted butter in grinded biscuits. Line the base of the moulds evenly and smoothly with the biscuit mixture. Put in the freezer to set.
  3. ( You can use paper cups for making it and once set remove the paper cup gently. )
  4. For Middle Layer:
  5. Puree the strawberries and sugar together in a mixer grinder. Divide it into two equal portions.
  6. Add the hung curd and cream cheese to the one portion, and blend well to make a smooth mixture. Pour it into a bowl.
  7. Add dissolved gelatin slowly into the strawberry mixture. Keep stirring continuously.
  8. Now pour this strawberry mix onto set biscuit base. Put in the fridge to chill for 5-6 hours at least or overnight.
  9. For Top Layer :
  10. Now add gelatin again into leftover strawberry puree and mix.
  11. Pour this mix over the set mixture to make top layer and again let it set in fridge for few hours.
  12. Garnish with strawberries and Enjoy.
