1 tbsp oil + 1tsp garlic herb butter

Garlic cloves 4, finely chopped.

onion, chopped finely, 2 spoons.

Oregano & chilli flakes 2 tsp each

Salt to taste

For making white sauce : Garlic herb Butter 2 tbsp

Maida/APF 3 tsp

1+1/2 cups milk or more

paprika and oregano 2 tsp each

1 tsp mayonnaise

1/4 tsp each mustard powder and onion and/or garlic powder

Salt and black pepper powder to taste

Processed, Mozzrella & Parmesan cheese for topping 4 tbsp

Method :

Wash and peel potatoes. Chop into fine cubes. Set aside.

Heat oil in a pan, add the butter. Put chopped garlic & onion. Saute for 1 minute. Mix in finely cut potatoes. Add salt and black pepper. Cook for few minutes.

Next add oregano and chilli flakes. Take out in a bowl and keep aside.

Make the white sauce:

Melt the butter, add maida/ flour. Let it roast for 1 minute. Roast it on low flame so that colour of flour should not change.

Add milk and stir until it thickens. Add salt and black peeper. Add mustard powder and onion and/or garlic powder. Then turn off stove. Cool it.

In the last add mayonnaise.

To Assemble :

Now in a oven proof remakin first layer white sauce. Place potato mix with spoon over it.

Again layer it with white sauce and potato mix. Cover this with white sauce. Place grated mix of all cheese over it.

Bake this in a preheated oven at 180 degree for 12 to 15 minutes or the upper cheese crust turns golden brown.

Serve hot.

Notes :

1. Make sure that the potatoes are completely cooked before you assemble the pie.

2. You could use a bit more cheese if you please, just to get more of a oozy effect. Also, you could use any cheese you want. I liked the combo of Processed,Mozzarella and Parmesan cheese in this.

3. I like using a touch of mayo in this because it adds a bit of extra flavour.

4. You can skip mayonnaise and use a bit more white sauce.
